I love coming up with new recipes, especially when it involves the kids!  We were grocery shopping the other day, talking about some new ideas and then my daughter perked up and said she had the best idea ever!  She wanted to make an orange cake, use orange juice, mandarin oranges, cream cheese and cool whip.  After a couple minutes of thinking this is the cake we came up with.  We kept it quite simple because I wanted her to be able to do most of it by herself and I think it came out delicious.  She was very proud of the cake and I was very proud of her!


Ingredients are as follows: 

1 (16.5 ounce) Orange Supreme Cake Mix
3/4 C orange juice or lite syrup (reserved from the can of oranges)
1/3 C applesauce
3 eggs

frosting: 
1 (15 ounce) can mandarin oranges
8 ounces cream cheese
8 ounces cool whip
1/2 C powdered sugar

Directions: 

Preheat oven to 350 degrees; grease a half sheet pan.

Drain the juice from the can of oranges; reserve for the cake.  Dice up the oranges and set aside.

Add the dry cake mix, reserved juice, applesauce and eggs into a medium bowl.

Mix together and pour into prepared pan.

Bake 10-12 minutes; until a toothpick in the center comes out clean.  Set aside to cool.

Cream together the cream cheese, cool whip and powdered sugar.

 

Fold in the mandarin oranges.

Cut the cake in half, remove one half from the pan and spread the icing on top.

Remove the other half and place on top (sprinkle with powdered sugar if you’d like).

 

Slice, serve and enjoy! This needs to be refrigerated if you’re not eating it right away.
