Ingredients are as follows:
1 (9 inch) pie crust
1/2 C pecan halves (I crushed mine up because of the kids)
3 eggs
1 C dark corn syrup
1 C sugar
1 tsp. vanilla
1/8 tsp. salt
Directions:
Preheat oven to 400 degrees; grease a 9″ pie pan.
Place unbaked crust into pie plate and arrange pecans in crust; set aside.
In a bowl, beat eggs well.
Mix in the corn syrup, sugar, vanilla and salt.
Pour mixture over pecans in crust.
Bake at 400 degrees for 15 minutes; reduce temperature to 325 degrees. Bake an additional 30 minutes or until center of the pie is set (mine took about 55 minutes).
Cool completely then slice, serve and enjoy!
Gooseberry Patch has graciously offered a cookbook to one of you and I bought this adorable gingerbread cupcake kit and gingerbread bakery bags too.
favorite thing is to make sausage balls for the family….that is
always the first thing they request….and the spicier the better for
them. 🙂

My favorite Christmas tradition is having our girls decorate the tree each year. They do all the ornaments and star.
Our family traditions are hot chocolate with marshmallows and watching Christmas movies on the weekends. During the weekdays I will bake them goodies 2-3 days out of the week. Not to mention listening to the radio station that plays Christmas music ALL DAY LONG as we drive around town. Christmas eve we spend with my family when we get home we set out the milk and cookies for Santa and carrots for the reindeer. Christmas morning we open up gifts and then make our way to my husband's family's house for more holiday FUN!!!
Reading of the Birth of Christ when my children were home…always get a warm feeling just thinking about it…
My favorite Christmas tradition is opening presents with my family on Christmas Day!! Let's us know we are truly blessed to be all together!!

When my daughter was 2 we explained to her that we celebrate the birth of Christ at Christmas. We shared the Christmas story and explained that because He loves her so much, He wanted her to get gifts on His birthday. (He got 3 so we limit her to 3 – from us.) She listened patiently and then asked where was His birthday cake. She wanted to sing and blow out the candles. I'd baked a red velvet cake that year and have every year since (she's now 16). We still put candles on it and sing happy birthday to Jesus.
