The holidays are fast approaching and I know I like to plan as much as possible! Every year on our Thanksgiving menu is my Pumpkin Roll. It’s simple to prepare, bakes up in a few minutes and it’s one of the first desserts to go! I hope you enjoy this as much as our family does.
Ingredients are as follows:
batter:
3 eggs
1 C sugar
1 C pumpkin
1 tsp. lemon juice
3/4 C flour
1 tsp. baking soda
2 tsp. pumpkin pie spice
filling:
8 ounces cream cheese, softened
1 tsp. vanilla
3/4 C powdered sugarextra powdered sugar to sprinkle on top
Directions:
Preheat oven to 350 degrees; grease a cookie sheet (mine was 10.25″ x 15.25″).
Whisk together the eggs, sugar, pumpkin and lemon juice.
Stir in the flour, baking soda and pumpkin pie spice.
Pour into prepared cookie sheet.
Bake for 8-10 minutes; until golden brown around the edges.
Flip out onto a towel that is sprinkled with powdered sugar.
Roll up (lengthwise) tightly and set aside to cool.
Cream together the cream cheese, vanilla and powdered sugar.
Unroll the cake and evenly spread the icing on top.
Roll it up once again.
Sprinkle with powdered sugar; slice, serve and enjoy!
Pumpkin Roll is my favorite Thanksgiving dessert! Love it! Never have baked one; but think I’ll try this recipe! (Whenever I’ve bought one, it always seemed like the cake was too thick…or the cream cheese filling wasn’t enough. Thus, I may try to get it the way I want it.)

I love pumpkin cake roll, though I've never made one myself. This looks moist and delicious! What a perfect Thanksgiving dessert!
