Sweet Apple Butter Muffins

Muffins are the perfect little treat and I love how versatile they are.  This recipe from Gooseberry Patch’s newest cookbook 101 Farmhouse Favorites  is one that’s streusel topped, filled with apple butter and oh so delicious!  In this new cookbook you can choose from Break of Day Breakfasts, Garden-Fresh Soups & Salads, Family Dinner Favorites, Blue-Ribbon Desserts and Classic Country Canning.  What I love about this book is that every recipe has a big, beautiful picture.  Once I saw the Sweet Apple Butter Muffins I couldn’t wait to make them.  They’re quick, easy and the perfect little treat for the kids to grab on their way out the door!

Ingredients are as follows:

1 egg
3/4 C milk
1/4 C oil
1 tsp. vanilla
1 3/4 C flour
1/3 C sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1/3 C apple butter
2 Tbsp. sugar
1/3 C chopped pecans
Directions:
Preheat oven to 350 degrees; line a muffin pan with paper liners or spray with non-stick cooking spray.
 
 
Whisk together the egg, milk, oil and vanilla.
Mix in the flour, sugar, baking powder, cinnamon, nutmeg and salt.
Spoon one tablespoon of batter into each muffin cup.
Top each one with a teaspoon of apple butter.
Evenly spoon remaining batter into each muffin cup; set aside.
Mix together the sugar and pecans.
Sprinkle evenly over muffins.
Bake for 15-20 minutes; until golden brown.  Allow to cool for a few minutes then remove from pan and continue to cool on a wire rack.
Take a bite and enjoy!
