Here is another quick and easy dessert that doesn’t require baking (it’s still hot here!) and it’s great for the kids to help out in the kitchen. My daughter pretty much made the entire recipe by herself and it was great quality time together! One nice thing about this recipe is that you can swap out the apricot preserves for whatever flavor you prefer.
1 ¾ C graham cracker crumbs
½ C butter, melted
Filling:
8 ounces cream cheese, softened
14 ounce can sweetened condensed milk
1 tsp. vanilla
Directions:
Grease a 9″ springform pan; set aside.
Press into prepared pan and set aside.
Beat the cream cheese, milk and vanilla together until smooth.
Pour into prepared crust.
Heat preserves in microwave for one minute then swirl into batter.
We used to put apricot preserves on vanilla ice cream when I was a kid…this pie looks great!
Yum! I always have extra apricot preserves lying around!
This is tempting me. I am an apricot fan and would not change the flavor, at least the first time, I made it.
