If you’ve been reading here long, you know that I love to do my part when it comes to helping others.  Recently I was asked to partner up with International Delight to raise awareness of their “Share your Delight” donation program. This program helps raise money to donate Winter Coats to children that need them.  All you have to do is register the UPC code from a specially marked bottle of International Delight®, Silk®, Horizon® or LAND O LAKES®.   For every UPC that you register, they will donate .50 cents to Operation Warm.   Pretty simple, huh?   Plus to make it even simpler, they are offering you a $1.00 off coupon to any Seasonal Creamer.  I was also asked as to how I use their Seasonal Creamers.  Of course I love them in my coffee (or straight out of the bottle!) and I also like to use them in recipes.  I think they’re a simple way to add great flavor…here’s what I came up with!

 Ingredients are as follows:

1/2 C butter
1 C International Delight Smore’s Coffee Creamer
4 eggs
1 C sugar
2 C flour
2 tsp. baking powder

topping:

3 C mini-marshmallows
1 C chocolate chips
1 graham cracker, crushed

Directions:

Preheat oven to 350 degrees; grease a 9 x 13 baking pan.

Heat butter & creamer in a saucepan until butter melts; set aside.

 

Beat eggs until thick (a few minutes).

 

Add sugar and whip until fluffy.

 

Mix in the flour and baking powder.

 

Slowly pour the creamer/butter mixture into the flour.

 

Mix until incorporated.

Pour into prepared pan.

 

Bake for 20-22 minutes; until a toothpick comes out clean.

 

Sprinkle on the marshmallows and chocolate chips.

 

Place in the oven for about 5 minutes, until the top is golden brown.

 

Sprinkle on the crushed graham cracker.

 

Slice, serve and enjoy!
