A couple weeks ago I made the Chocolate, Strawberries & Cream Dessert and I only used half a pack of the cream filled cookies. So I decided to grind the other half up, put them in the cupboard and use them another day. However, after opening the cupboard and seeing them day after day they started to work on my mind. All I kept thinking about was how I was going to use these crumbs up! My kids like peanut butter so a peanut butter pie it was 🙂 This pie is a quick and simple dessert that you can throw together in no time at all.
Ingredients are as follows:
1 1/2 C chocolate cookie crumbs, reserve about a tablespoons for the top
2 Tbsp. butter, melted
8 ounces cream cheese, softened
3/4 C powdered sugar
3/4 C creamy peanut butter
8 ounces cool whip
Directions:
Mix together the cookie crumbs and melted butter.
Press into a nine inch pie plate and stick in the freezer.
Cream together cream cheese and powdered sugar.
Mix in the cool whip.
Fold in the peanut butter.
Spread into the chilled cookie crust.
Sprinkle on the reserved crumbs and place in the fridge for an hour.
Slice, serve and enjoy!
I would modify the recipe and use chocolate Cool Whip, but I can never find it during the holidays anymore. It is so addictive to make cheesecake in this super easy way.
