Creamy Crockpot Rice Pudding

 
 
 
 

 

I was thrilled when I was told that I would get the chance to review the new Gooseberry Patch Quick & Easy Christmas Cookbook!  Not only is it filled with over 220 recipes, but also simple decorating ideas and gifts.  This past week I made two recipes and today I made the creamy rice pudding that is made in your crockpot!  How simple is that?  It turned out quite well and I love that I didn’t really have to mess with it too much!
 
 

Ingredients are as follows:

 
9 C whole milk
1 C long-cooking rice, uncooked
1/8 tsp. salt
1 C plus 1 tsp. sugar, divided
3 eggs
1 T. vanilla
1 C raisins, cooked
 *I didn’t cook my raisins, I just tossed them in with the milk, rice and salt
 
Directions:

Combine milk, rice and salt (and raisins) in a slow cooker.  Cover and cook on high for 2 1/2 – 3 hours.  Stir every hour. 

 

 

After rice is cooked, stir in 1 C of sugar. 
 
 
 
In a bowl, beat together eggs, 1 tsp. sugar and vanilla.
 
 
 
Stir into the rice mixture; fold in the cooked raisins (if you didn’t previously). Cover and cook an additional 5 to 10 minutes, until heated thoroughly.
 
 
 
Serve some up and enjoy!

I put it all together in a Christmas basket that I’ll wrap before I ship it out to one lucky reader!

  14. My mom used to make us rice pudding but I don't remember her sharing a recipe. She passed away in August. I think I will make this tomorrow afternoon when I'll be working from home. I love Gooseberry and have been following them on FB for quite a while now. With the temps cooling down, it's time for some comfort foods and that is what I find with the Gooseberry recipes.

  15. Hmmm, quick and easy…
    We haven't made these soy sauce string beans in a while, but will start again: steam beans for a few minutes until almost done. In the meanwhile, saute some pressed garlic in olive oil, add the nearly cooked beans, and stir for may be a minute. Then add a splash of soy sauce as you turn off the heat. Our kids used to love it (and then, who knows what happened…)

    Pumpkin Gooey Butter Cakes

    Ingredients
    Cake:

    1 (18 1/4-ounce) package yellow cake mix
    1 egg
    8 tablespoons butter, melted

    Filling:

    1 (8-ounce) package cream cheese, softened
    1 (15-ounce) can pumpkin
    3 eggs
    1 teaspoon vanilla
    8 tablespoons butter, melted
    1 (16-ounce) box powdered sugar
    1 teaspoon cinnamon
    1 teaspoon nutmeg

    Directions

    Preheat oven to 350 degrees F.

    Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

    To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.

    Serve with fresh whipped cream.

    Variations: For a Pineapple Gooey Cake: Instead of the pumpkin, add a drained 20-ounce can of crushed pineapple to the cream cheese filling. Proceed as directed above.

    For a Banana Gooey Cake: Prepare cream cheese filling as directed, beating in 2 ripe bananas instead of the pumpkin. Proceed as directed above.

    For a Peanut Butter Gooey Cake: Use a chocolate cake mix. Add 1 cup creamy peanut butter to the cream cheese filling instead of the pumpkin. Proceed as directed above.

  20. My favorite quick recipe is hot mulled cider in the crockpot: 1/2 gallon cider, 1/2 c brown sugar, 2 cinnamon sticks, 2 orange slices, 1 tsp whole allspice, 1 1/2 tsp whole cloves. Simmer on low 2-6 hours…4 hours is the best time.

    My favorite quick & easy recipe is a fruit salad. You basically can put any fruit (and nuts)you want in it. I use bananas, apples, fruit cocktail and then add miniture white marshmallows. After you mix it up you scoop out strawberry ice cream on top to cover all of the salad and put in fridge and let the ice cream melt and then mix again. It is so good.

    My favorite quick and easy is a Rum Cake recipe I got from a friend, 15-20 minutes pop it in the oven and you have a wonderful dessert!
    Rum Cake
    1/2 cup chopped pecans
    1 pkg small vanilla instant pudding
    1/2 cup water
    4 eggs
    1 pkg duncan hines Butter recipe cake mix1/2 cup light rum (sometimes i use coconut rum or vanilla rum)
    1/2 cup cooking oil

    Grease bundt pan and crumble nuts in bottom. in bowl mix cake mix, pudding, rum, water, oil & eggs. Mix for 2 minutes pour batter into pan and bake at 325 degrees for 50 to 60 minutes. Remove cake when done and immediately pour hot rum glaze.

    Glaze:1 cup sugar1 stick butter1/4 c. rum1/4 c. water (sometimes i use coconut rum or vanilla rum) place in small sauce pan and boil 2 to 3 minutes and pour over cake when out of oven. Cool cake in pan for 30 minutes, then dump out.

  111. This cookbook and whole gift basket looks great! How fun! My fave recipe to make for the holidays is called "Lime nut cheese mold". Sounds weird by the name, but my Grandma always made it, it's soo good! Lime jello, cream cheese, crushed pineapple and walnuts put in a jello mold. Yum & so pretty!
