Warm, delicious Mixed Berry Hand Pies with homemade jam is the perfect summer treat!  Last week I showed you how to make your own jam and today we are featuring it in these flaky hand pies.  I started out with a simple puff pastry dough because I wanted a light and fluffy dough that didn’t take away from the berries.  If you’re in a pinch, you could use crescent roll or pie dough, but puff pastry tastes the best and it’s really not complicated at all.  To that you’ll fill the dough with some fresh berries and the jam we made last week.  Crimp it all together, bake and you end up with a flaky hand pie.  Make sure you have your homemade jam and homemade puff pastry on hand at all times, so you can whip up these delicious treats any time!

Mixed Berry Hand Pies

Ingredients
  1. 1- 8 oz. jar mixed berry jam
  2. 2 cups fresh blueberries
  3. Zest from 1 lemon
  4. 2 tbsp. corn starch
  5. 3 tbsp. milk for brushing dough
  6. 3 tbsp. sugar, for topping
  7. 1 recipe Puff Pastry Dough, divided into 8 portions
Instructions
  1. Line 2 baking sheets with parchment paper.
  2. Roll each ball of dough out to a 5-6 inch round on a well floured surface, adding more flour as necessary to keep dough from sticking.

  1. Combine blueberries, cornstarch and lemon zest in a small bowl; set aside.
  2. Place sugar in a saucepan over medium heat and stir to dissolve.
  3. Add blueberry mixture and heat to a full rolling boil.
  4. Boil hard 1 minute, stirring constantly.
  5. Remove from heat. Skim foam, if necessary.
how to assemble
  1. Spread 2 tbsp mixed berry jam into center of each round, leaving a ½ inch edge to seal.
  2. Top with ¼ cup blueberry mixture.
  3. Fold dough in half over filling, using the tines of a fork to press edges together.
  4. Place each finished hand pie on prepared baking sheet.
  5. Brush pies with milk and sprinkle with sugar; cut a decorative slit into top of pie.
  6. Repeat with remaining dough.
  7. Place hand pies on baking sheets lined with parchment and refrigerator for 20 minutes.
  8. Pre-heat oven to 400°
  9. Bake hand pies in the center of the oven until filling is bubbly and crust is golden, about 25 minutes.
  10. Allow to cool slightly before eating.
