Flaky shortbread with a dollop of greek yogurt,
topped with sweetened strawberries!
Shortbread is one of our favorites and Strawberry Shortbread Trifle is a favorite dessert of ours. However, sometimes I don’t need to make a big trifle so I like to make these cute little strawberry shortcakes. I love to top them off with greek yogurt because it’s delicious, simple and good for you too! I then slice up some strawberries and mix them with a little bit of preserves to make them glisten for the perfect topping…simple to make and delicious to eat!

Ingredients are as follows:
1/2 C butter
1/3 C sugar
1 C flour
1/2 C cornstarch
1 1/2 C sliced strawberries
2 Tbsp. strawberry preserves
vanilla greek yogurt
Directions:
Preheat oven to 350 degrees; grease a cookie sheet.
Cream the butter and sugar together.
Add the flour and cornstarch; mix until crumbly.
Turn out onto a table and knead it until it forms into a ball. Wrap in plastic wrap and place in the refrigerator for 15 minutes.
Remove from fridge and roll out to 1/2″ thick.
Slice into desired size squares.
Place onto the greased cookie sheet.
Bake for 10-15 minutes; until golden brown. Remove and allow to cool.
While they’re cooling, mix the sliced strawberries and preserves together.
Place a dollop of greek yogurt onto a shortcake. Then place a few sweetened strawberries on top and enjoy!
