This winter has been a rough one! We’ve been snowed in for days, we’ve had arctic air temperatures, and to top it off, ice storms. It hasn’t been a very pleasant season at all, and I can’t wait for Spring to get here. Last week the kids were off school six days in a row, I couldn’t get out to the store, and they were in the mood for a new dessert. My supplies were running low and I had no idea what to make. I looked in the pantry and fridge to see what I had and lo and behold Blackberry Cheesecake Bars were born. I love how something so simple turns out to be so delicious; it really can’t get any easier then this!
Ingredients are as follows:
1 (16 ounce) Ready to Bake Sugar Cookies (24 cookies in a pack)
8 ounces cream cheese, softened
1/2 C sugar
1 egg
1 tsp. vanilla
1/2 C seedless Blackberry Preserves
Directions:
Preheat oven to 350 degrees; grease an 8 x 8″ pan.
Break off 16 cookies and evenly press into the bottom of the pan; set aside.
Cream together the cream cheese, sugar, egg and vanilla.
Spread this on top of the raw cookie dough.
Place little dollops of preserves on top of the cream cheese mixture.
With a knife, swirl it around.
Break the remaining 8 cookies into little pieces and place on top.
Bake for 30-35 minutes; until golden brown.
Allow to cool in the fridge then slice, serve and enjoy!
OH.MY.GOODNESS! Those bars look divine. I'm crazy wild about cream cheese and blackberry anything too. I imagine with taste treats like this, your kids did NOT wanna go back to school. =) YUM! Pinned!
