October is Breast Cancer Awareness Month and as an effort to help raise awareness, Eggland’s Best is once again teaming up with Susan G. Komen to help find a cure. From now until November 15th, Eggland’s Best will be turning their infamous red “EB” stamp into a pink “EB” and stamping a Susan G. Komen Running Ribbon on as well.
1 C butter, softened
4 Eggland’s Best eggs
3 C flour
4 tsp. baking powder
1 1/2 C milk
2 tsp. vanilla1 (3 oz.) package strawberry jello
1 C boiling water
1/2 C cold water
Directions:
Preheat oven to 350 degrees; grease two 9 inch round baking pans.
Beat together the butter and sugar until light and fluffy.
Beat in eggs, one at a time, until completely incorporated.
Combine 2 C of the flour and baking powder. Fold in by hand.
Stir in milk and vanilla.
Gently fold in the last cup of flour.
Pour batter into prepared pans and bake for 25-30 minutes. Cool cake in pans for 15 minutes. While they’re cooling mix the boiling water and jello together, slowly stir in cold water; set aside. Randomly poke holes into your cake and pour jello over the top.
Place in the fridge for a few hours. Remove from pans and frost with cream cheese frosting.
Slice, serve and enjoy!
