A few months ago I was talking to one of my readers named Kathleen. We were talking about favorite desserts and she mentioned that she had a wonderful recipe for Tiramisu. It was different from the classic recipes because it didn’t use Mascarpone cheese and it calls for all low-fat ingredients. I asked if she’d be willing to share the recipe and she was more than happy to! I’ve always wanted to make Tiramisu so this was the perfect recipe to try. It uses every day ingredients and it’s very easy to prepare. It does call for Kahlua, but I didn’t add it because my kids will be eating this too. I also scaled down the coffee mixture because I forgot to cut my ladyfingers in half. Even so, it turned out perfect!

Ingredients are as follows:
1 (14 ounce) can fat-free sweetened condensed milk
1 (1.4 ounce) package sugar-free vanilla instant pudding
1 (8 ounce) block 1/3-less-fat cream cheese, softened
1 (8 ounce) tub frozen lite whipped topping (cool whip), thawed
1/2 cup hot water
1 tablespoon instant coffee granules
1/2 cup Kahlua (optional)*
24 cake-like ladyfingers
3 tablespoons unsweetened cocoa
Directions:
Have an 8×8 inch pan ready.
In a large bowl combine the cold water, milk and pudding; stir well with a whisk then set aside.
Cream the cream cheese until nice and smooth.
Add pudding mixture and mix until completely incorporated.
By hand, fold in the cool whip; set aside.
Add the coffee granules into the hot water and stir until dissolved.
Arrange 12 of the ladyfingers into the bottom of your dish.
Drizzle half of the coffee over the ladyfingers.
Spread one-half of the pudding mixture evenly over ladyfingers.
Sprinkle with a tablespoon of cocoa powder.
Repeat the layers again; using two tablespoons of cocoa for the top. Refrigerate for a few hours so the flavors can meld together.
Slice, serve and enjoy!
