This time of year we have a lot of birthdays going on and I’m always trying new recipes on the birthday boy/girl. We all love popcorn so I decided to make a popcorn cake as a way to “ring in” all of their birthdays. The kids loved that they could just tear off a piece and eat it, I loved that it didn’t keep me in the kitchen and it was simple to make. You can even customize it to your liking by adding chocolate chips, candy bars, gummy bears…anything you’d like!
Ingredients are as follows:
2 bags of microwaved popcorn popped or 12 cups of popped popcorn
10 ounces large marshmallows
1/4 C butter
toppings (I used sprinkles)
Directions:
Grease a 10 inch bundt pan and sprinkle in some sprinkles; set aside.
Place the popcorn in a large bowl removing the unpopped kernels.
Place the butter in a large bowl; melt in the microwave (mine took a minute on high).
Stir in the marshmallows and coat them evenly with the butter.
Place back in the microwave and heat for another minute and 15 seconds.
Remove and stir until melted.
Pour over the popcorn and make sure it’s evenly coated.
Pour into the pan, pressing it in so it all fits.
Allow to set up for about 10 minutes then remove from pan and enjoy!
