Fruit is one of my favorites, and I love when it’s summer and there is so much in season.  Fresh fruit makes this Fruit Pizza Cheesecake Tart not only look beautiful, but taste amazing as well.  It starts out with your favorite sugar cookie crust, then a creamy layer of marshmallow, cream cheese and yogurt that’s all mixed together, and finally topped with your favorite fruit.  A nice glaze is brushed on top and then it’s ready for you to sink your teeth into.  Fruit Pizza Cheesecake Tart is the perfect dessert for home or any summer party!

Fruit Pizza Cheesecake Tart

Sugar Cookie Crust
  1. 1 package (16 ounces) refrigerated sugar cookie dough
Filling
  1. 1 cup of marshmallow fluff
  2. 8 oz cream cheese
  3. ½ cup vanilla Greek yogurt
Topping
  1. 3-4 cups fruit of choice
  2. 3 tablespoons jam of choice
  3. 1 tablespoon water
Crust
  1. Preheat the oven to sugar cookie package directions.
  2. Generously spray tart pan with nonstick spray (we used a 12-inch pan) and place atop a large sheet pan; set aside.
  3. Unwrap the cookie dough and press it evenly, including up the sides 3/4 up the pan.
  4. Bake for approximately 20-minutes or until lightly brown at the edges and center.
  5. Remove and cool completely.
Filling
  1. Make sure the cream cheese is softened then cream in the marshmallow fluff and vanilla Greek yogurt.
  2. Cover and chill in the fridge until the crust is completely cool.
  3. Fill the crust with the filling mixture.
Fruit
  1. Arrange fruit to your liking on top of your pie.
  2. Mix jam and water together; microwave for 10-15 seconds then stir well.
  3. Brush the mixture over the top of the fruit.
  4. Serve immediately or cover and cool in the fridge.
