Today my brother is getting married and I couldn’t be happier for him! I was asked to make some cookies for the reception and I wanted to make sure I made one of his favorites. He loves those little pill bottle cookies that are tender, flaky and have that delicious creamy filling inside. It was towards the end of the day and when I looked at the recipe I saw that it said to let the dough rest for at least an hour. Being the impatient person that I am, I decided to see if I could make them a lot quicker. I did! This is the basic recipe, however I didn’t let the dough rest. I just spooned little dollops onto the cookie sheet, sprinkled on some sugar and baked. They came out perfect! I know the cream inside is just a butter cream, however my love of cream cheese won over and I added a little bit to it which made them even better!
Ingredients are as follows:
1/2 C butter
2 Tbsp. cream
1 C flour
Sugar
filling:
2 Tbsp. butter, softened
1/4 C powdered sugar
1 tsp. vanilla
1 ounce cream cheese, softened
Directions:
Preheat oven to 350 degrees.
Mix together the butter, cream and flour.
Spoon little dollops onto an ungreased cookie sheet.
Sprinkle a little bit of sugar onto each cookie.
Bake 8-10 minutes; until golden brown. Remove from tray and allow to cool.
Cream together the butter, powdered sugar, vanilla and cream cheese.
So, it isn't possible that they used the opening of the pill bottle as the cookie cutter? Hmm…

When they flattened them they used pill bottles to do it.

It makes about a dozen depending on the size you make them.
I couldn't imagine using a deodorant lid, lol…thankfully we now have cookie cutters 🙂
Been making these for years for Christmas, but I use a small round cookie cutter. Before, YEARS ago It was a deodorant round lid. Roll your dough out on flour surface, cut rounds, place in sugar on plate, both sides, put on CookiE sheet, take fork an put an X on it. Bake for 7 to 9 min . Let cool. Make your own or buy cream cheese frosting, I add food coloring for different colors. Put frosting in between two, refrigerate . Made these for a wedding like twenty years ago also. There light an airy.
