I love lofthouse sugar cookies! So I decided to make them into tarts, but not just any tarts…Pumpkin Tarts! I took my recipe and instead of using the sour cream that’s called for, I replaced it with pumpkin. This gave the tarts just a subtle hint of pumpkin. Then I topped them off with a maple buttercream frosting and sprinkled on a little cinnamon. It all came together perfectly! They’re very simple to make and they turned out cute too 🙂
Ingredients are as follows:
dough:
1/2 C sugar
1/4 C butter, softened
1 egg
1 tsp. vanilla
1/2 C pumpkin
2 1/2 C flour
1/4 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
frosting:
1/2 C butter, softened
2 Tbsp. maple syrup
1 C powdered sugar
1 Tbsp. cream
cinnamon
directions:
Preheat oven to 350 degrees; grease mini-muffin tins.
Cream the sugar and butter together.
Mix in the egg.
Stir in the vanilla and pumpkin.
Stir in the flour, salt, baking powder and baking soda.
Place dollops of dough into the mini-muffin tins.
Bake for 10-12 minutes; until brown around the edges. Set aside to cool.
Cream the butter and maple syrup together.
Slowly mix in the powdered sugar.
Add the cream and mix until fluffy.
Place in a pastry bag and swirl on top of the tarts; sprinkle on cinnamon.

I've only just started following your wonderful blog and I'm not familiar with lofthouse sugar cookie dough but from the look of it in your photos would it be possible to press the pumpkin sugar cookie dough balls down and up the sides of the muffin tins and then add a dallop of pumpkin pie filling to them – to make them more like a filled tart? Your recipe looks delicious and I will definitely be trying it over the holidays!
Thanks Cath for the kind comment 🙂 I don't think that would work because the dough rises. If you put the pie filling in and then bake them, the dough would expand and the filling would be everywhere! After they bake, you could always hollow out a little hole, fill them with pumpkin pie filling and then put the frosting on top.
