I make sugar cookies a lot at our house. We love to frost ours with cream cheese frosting and they’re usually decorated by four kids ๐ So when I saw these cupcake liners and picks I knew I wanted to whip up a batch, but wasn’t sure what flavor to make. Being that we love sugar cookies, I decided to make sugar cookie cupcakes!
Batter:
1 C sugar
1/2 C butter
2 eggs
1 Tbsp. vanilla
1 1/2 C flour
1 1/2 tsp. baking powder
1/8 tsp. salt
3/4 C half-n-half
Directions:
Preheat oven to 350 degrees; line your cupcake pan with wrappers.
Cream together the sugar and butter (I did mine for about 10 minutes).
Whisk in one egg.
Add the other egg and mix until fluffy.
Mix in the vanilla, flour, baking powder and salt (it will be very thick).
Slowly stir in the half-n-half. Mix until combined.
Evenly divide batter into twelve liners.
Bake for 18-20 minutes; until slightly brown. Let cool completely.
They are so simple to assemble too. They come in one piece; you just unfold them and pop in the insert and you’re ready to go. My six year old put mine together for me!
Bake-A-Box is an amazing company! They are family owned and love to work with small businesses so no order is too big or too small. They support their local communities and are involved with charities as well. Please be sure to stop over to their “About Us” page to read more. They have graciously offered not one, but two of you a set of 12 single cupcake boxes (shown below). They have a flip insert that will fit a regular or jumbo sized cupcake. Tie on a tag and these would make adorable gifts to give away this holiday season!
