We have lots of blackberry bushes! We usually just pick them off the bushes and eat them, however this time my husband wanted dumplings. So the deal was, if you pick them then I’ll make them. I made our favorite dough, filled it with sweetened blackberries and topped it off with some vanilla ice cream. A perfect summer treat!
Ingredients are as follows:
Dough:
2 1/2 C flour
1/4 C sugar
1/4 tsp. salt
1 C butter, chilled and sliced
1/4 C milk, chilled
1 tsp. vanilla
Filling:
5-6 C fresh blackberries
3/4 C sugar
2 tsp. vanilla
Directions:
Preheat oven to 350 degrees. Grease an oblong baking dish.
Place berries into a bowl and toss with sugar and vanilla; set aside.
Mix together the flour, sugar, and salt. Add sliced butter.
Cut in the butter until you get a crumbly mix.
Add vanilla and milk. Mix until a dough forms.
Divide dough into six pieces. Roll one out into a circle (about 6-7 inches wide).
Place the circle of dough into a bowl. This will hold the dough upright for you.
Fill with 3/4 C of sweetened berries.
Crimp the top of the dough together.
Place into prepared pan. Repeat with remaining dough and berries.
Bake for 35-40 minutes or until golden brown.
Serve with some vanilla ice cream on top and enjoy!
My boyfriends mother is coming to stay with us this weekend so I want to make her something delicious and she loves blackberries so I think this is the winner! Thanks for sharing!

This is such an excellent tutorial! I have never made fruit dumplings before, but I am looking forward to trying these. Blackberries are just coming into season here in England. Thank you for sharing this excellent post with Let's Do Brunch!
