My grandfather has diabetes, but he doesn’t miss out on delicious food.  My gram makes everything from scratch and it always tastes amazing; you would never know it’s diabetic friendly.  I make a lot of her recipes for my family, and now I have another resource with the 4-Ingredient Diabetes Cookbook.  You’ll be amazed by the dishes you can prepare with just a few simple ingredients!

Ingredients are as follows: 

1 pound frozen peaches, partially thawed
12 ounces frozen raspberries, partially thawed (I used strawberries)
1 (7 ounce) package blueberry muffin mix
3 Tbsp. canola oil

Directions:  

Preheat oven to 350 degrees; spray a 13 x 9 inch baking dish with non-stick cooking spray.

Place the peaches and raspberries (or strawberries) into the prepared dish.

Sprinkle the dry muffin mix evenly over the fruit.

Drizzle the oil all over the top.

Bake for 1 hour and 15 minutes; until golden brown.   My topping was still dry so about half way through the baking, I stirred it around a little to mix with the fruit juices.

Serve and enjoy!
