I make sugar cookies a lot at our house.  We love to frost ours with cream cheese frosting and they’re usually decorated by four kids πŸ™‚ So when I saw these cupcake liners and picks I knew I wanted to whip up a batch, but wasn’t sure what flavor to make.  Being that we love sugar cookies, I decided to make sugar cookie cupcakes!  

Ingredients are as follows:

Batter:
1 C sugar
1/2 C butter
2 eggs
1 Tbsp. vanilla
1 1/2 C flour
1 1/2 tsp. baking powder
1/8 tsp. salt
3/4 C half-n-half

 

Frosting:
12 ounces cream cheese, softened
1/4 C butter, softened
2 tsp. vanilla
2 C powdered sugar

Directions:

Preheat oven to 350 degrees; line your cupcake pan with wrappers.

Cream together the sugar and butter (I did mine for about 10 minutes).

 
 

Whisk in one egg.

 

Add the other egg and mix until fluffy.

 

Mix in the vanilla, flour, baking powder and salt (it will be very thick).

 

 

Slowly stir in the half-n-half.  Mix until combined.

 

Evenly divide batter into twelve liners.

 

 

Bake for 18-20 minutes; until slightly brown.  Let cool completely.

 

 
For the frosting: Cream together the cream cheese, butter and vanilla.

 

 
 
Add the powdered sugar and mix until nice and fluffy.
 
 
Frost the cupcakes and enjoy!
