Sift Powder sugar
In the food processor mix your almond powder and powder sugar
Put egg whites in the mixer full blast
Then add your sugar and dry egg whites in your egg white mixture
In the separate bowel continue to mix by hand the almond and the powder sugar
The egg white need to be super stiff
Fold egg whites to the dry ingredients
On the sheet pan place a silicone sheet
Use 805 tip to pipe.
When you pipe; press, stop and cut
Let dry for 30 minutes
Cook at 320F between 10-12minutes rotating at least once half way.
