Apple Fritter Pull-Apart Bread

If you like apple fritters then you’ll love this Apple Fritter Pull-Apart Bread!  I tried rolling the dough, like cinnamon rolls, however the texture wasn’t right.  So even though this may look somewhat complicated to make, it’s not.  You get all the flavors of an apple fritter, the texture and the wonderful glaze baked into one big bread.  We ate ours warm and it is delicious!

 

 
Ingredients are as follows:

 

Dough:
3 C flour
1 package yeast
1/4 tsp. salt
1/2 C brown sugar
1/4 C water
1 egg, beaten
3/4 C milk
1/4 C butter

 

Filling:
6 small apples, peeled & diced
1 Tbsp. lemon juice
1 C brown sugar
1 tsp. vanilla
2 Tbsp. butter
1 tsp. cinnamon
1 tbsp. cornstarch

 

Glaze:
1 Tbsp. butter, softened
1 tsp. vanilla
3/4 C powdered sugar
3 tsp. half & half (or milk)

 

Directions:Preheat oven to 350 degrees.  Grease a 9 x 5 bread pan.

 

In a skillet, cook apples, lemon juice, brown sugar, vanilla, butter, cinnamon & cornstarch until mixture is thickened.  Set aside to cool.

Heat the milk in a small saucepan until it bubbles; remove from heat. Add the butter and stir until melted; set aside.

 

 

Put flour, yeast, brown sugar and salt in a bowl, mix well.

 

 

Add the water, egg and milk/butter mixture.

 

 

Mix until dough forms into a ball; knead for an additional five minutes.

 

 

On a well floured surface, roll dough into a rectangle.
Evenly spread apple mixture over dough.

Cut dough into even squares (I got 20 from my dough).

Carefully stack pieces of dough onto each other forming four piles.                                      (use a spatula, it makes stacking much easier!)

Place piles of dough into prepared pan.

Bake 45-50 minutes; until golden brown.  Immediately remove from pan.

Mix butter, vanilla and powdered sugar into a bowl.  Add half & half; stir until you get a creamy consistency.

Pour on glaze and allow to setup for a few minutes.

Pull some apart and enjoy!

  2. It turned out dense and uneatable… n Next time I'll raise the dough 30 minute, and raise it 1hr before baking. Shouldn't a yeast dough be raised just like any other bread recipe?

    1. Normally a yeast dough does need to rise, however this one does not. I never do and it turns out perfect every time. Make sure the dough is not real thick or it will be a lot denser.

  4. two questions: what is the consistency of the dough to be like? it seems like i need to add more flour so i can roll it out. and secondly, how big is the rolled rectangle? thank you.

    1. When you touch the dough it's a little sticky, however not enough to actually "stick" to your finger. The rectangle can be any size really, but I think mine was about 20 x 20 inches 🙂

  6. My loaf is in the oven right now! My apples were so juicy that the filling was oozing all over the counter, but once the slices were in the pan, I scooped up the rest of the juices and drizzled over the whole loaf before baking. I can't wait to share it with my family!

  7. Thanks so much for sharing this recipe! I just made it and have a quick question. How do you immediately remove the loaf from the pan! I tried, and the whole thing fell apart into pieces. Every layer just separated and slid apart. From the pics, it looks like I had wayyy more filling than you, for some reason.Can I just leave it in the pan instead of taking it out? It is amazingly delicious and I will definitely make it again! But I want to make some as gifts, and it wasn't so pretty once it fell apart 😉 any tips? Thanks again!!!

    1. You can always cut down on the filling. If you have larger apples, only use about three. You can let it sit in the pan to cool down and then remove. I say to remove it so all the filling doesn't stick to the pan. A great gift idea would be to buy a new pan, let it cool in the pan completely then wrap it up and tie a bow on it 😉 Thanks so much for the sweet comment; I'm happy you like it as much as our family does!

I made this last weekend for our weekly "Muffin Monday" – like a mini, one-person bake sale each Monday among the Elementary staff, we pay for the snacks and send the money to a local orphanage 🙂 I cut the sugar in half in both the dough and apples and felt it was sweet enough; next time I'm going to try letting the dough rise once before rolling it out to see if that affects the texture. It was amazingly quick and freeing though to just knead it and then roll it out – I've never seen a yeast recipe like this before! Thank you for sharing your recipe. Everyone enjoyed it.

  26. I made this today, its in the oven baking. I did have to add 1/2c more flour to the dough, but I used a Xlg egg and a little extra butter to use up the balance of a cube so it makes sense. I also didn't have enough apples, but some raisins did the trick. Thank you for a awesome recipe, I am sure it will be gone in minutes after I pull it out!

  28. Question on the yeast — I don't see any rising time in the recipe (yay! a big plus for me), so does that mean you're using rapid rise yeast, or is it still just the active dry stuff?

  29. Lisa, thanks for your reply, I just saw it now (not before my previous post) So for some reason I do clearly need more flour! I'm determined to try this one again…also I dont think I kneaded the dough for 5 min. I somehow missed that step, at least not by hand I used the dough hook on the mixer but maybe it needs hand kneading! I'll try again sometime and let you know how it goes!:) I know once I get it right it'll be awesome!:)

    It sounds like you need some more flour. I would only add about a 1/4 cup at a time until it holds it's shape. Don't forget to knead the dough for five minutes too! I hope you enjoy the recipe!

  31. Hi! This looked amazing, so i"m trying to make it right now. I thought I followed the directions to a T, but my dough doesn't hold the ball shaped :(…I'm going to try to roll it out but my guess is it will take a LOT of flour, maybe about 1/2 cup, some for the bottom some for the top? Anything else I can try for next time? I'm determined to make my baked good turn out, so I try them over a few times til I get it:) Thanks for the recipe!:)

    1. For what it's worth, I generally just measure out a tablespoon when directions say that 🙂 I keep a big tupperware of yeast and after a while it gets a little less effective so a tablespoon's not only easy, it's about right.
