If you’re like me, you always seem to have some cranberries left over from Thanksgiving and you’re not quite sure what to do with them. I also had some pumpkin leftover since I made the pumpkin crunch cake too. So what to do with cranberries and pumpkin…how about scones? These…
Pin It To celebrate the 4th of July I decided to make a red, white & blue cake. This cake is a cross between a sponge and pound cake. It’s airy, but a little dense too (if that makes sense!). The icing is a vanilla buttercream; I…
Pumpkin Crunch Cake can be considered a dessert as well as a side. It’s in the same category as sweet potato casserole. A little sweet, but also a little savory. I asked my readers what their favorite Fall recipe was and Cydnee said her favorite was Pumpkin Crunch Cake and…

Weird, I just saw another post where someone used the same recipe and replaced the pumpkin like you did. I love the idea of making little bite sized tarts. These sound so good.
Wow! I love lofthouse cookies, they're so soft! Thanks for sharing on Munchin' on Monday's!
Ohhh your tarts look delicious!!
I've only just started following your wonderful blog and I'm not familiar with lofthouse sugar cookie dough but from the look of it in your photos would it be possible to press the pumpkin sugar cookie dough balls down and up the sides of the muffin tins and then add a dallop of pumpkin pie filling to them – to make them more like a filled tart? Your recipe looks delicious and I will definitely be trying it over the holidays!
Thanks Cath for the kind comment 🙂 I don't think that would work because the dough rises. If you put the pie filling in and then bake them, the dough would expand and the filling would be everywhere! After they bake, you could always hollow out a little hole, fill them with pumpkin pie filling and then put the frosting on top.
They look absolutely delicious!
Oh yummmmm!
