With the holidays being over, it’s time to get back to eating healthy. When I wanted to lose some weight, I chose salads for lunch every day, and even now, salads are one of my favorite go-to meals. The store sells a carton that has four different kinds of lettuce in it so I pick that up, some romaine, and spinach so there’s always a variety of lettuce in the fridge. I’ve been wanting to try a Greek salad for awhile now, and this past week I finally did. I must say, it was delicious! The dressing is simple, not overpowering, and with all the veggies, this salad was perfect. I do like to have a good bit of protein in my salads so next time I may add in some grilled chicken or serve it on the side. If you’ve never tried a Greek salad before, this recipe is a great one to try.
- 1 large bowl of mixed lettuce, rinsed & dried
- 1 red onion, thinly sliced
- kalamata olives, pitted
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 large tomatoes, chopped
- 1 cucumber, sliced
- 1 cup crumbled feta cheese
- 6 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon sugar
- 1 teaspoon dried oregano
- 1 lemon, juiced
- ground black pepper to taste
- dash of garlic powder
- On top of the lettuce, add the onion, olives, bell peppers, tomatoes, cucumber and cheese.
- Whisk together the olive oil, red wine vinegar, sugar, oregano, lemon juice, black pepper, and garlic powder.
- Pour dressing over salad, toss and serve.
- Do not pour on the dressing until you're ready to serve.
