Summer is in full swing and I love all the fresh fruit in season!  My family loves strawberries, blueberries, and blackberries so I made this quick and easy Sugar-Free Berry Cheesecake Salad.  It’s sugar-free and made with fresh whipped cream…no frozen whipped topping! It’s creamy, delicious, and oh so good.  This is the perfect dessert on a hot summer day which the whole family will enjoy!

Ingredients are as follows:  

1 pint of blackberries
1 pound of strawberries
6 ounces of blackberries
1 C + 1Tbsp heavy whipping cream
8 ounces cream cheese, softened
1/4 C sugar substitute (I used Splenda)
1 tsp. vanilla

 

Directions:

Whip 1 cup of heavy whipping cream until stiff peaks form; set aside.

Cream together the cream cheese, 1 Tbsp. heavy whipping cream, splenda, and vanilla.

By hand, fold the whipped cream into the cream cheese mixture.

Add in the berries.

Slowly mix until the berries are evenly coated.
