Brown rice, apples & raisins cooked in apple juice to make a simple and delicious dessert.

The warm weather is finally here and that means we’re all looking for quick, easy and delicious recipes that won’t keep us in the kitchen long.  What I love about this recipe is that you can toss it all in one pot, cook for a few minutes and then you’re ready to have this as a breakfast, dessert or just a side dish.  I love making this with Minute® Rice brown rice because it adds a little bit of nutty flavor and is a great nutritional option.  Plus the rice cooks up in only ten minutes so it comes together quite quickly.  You can serve it warm with a drizzle of cream or cold like a salad…either way it’s delicious!
Ingredients are as follows: 
2 C apple juice
2 C Minute® Rice brown rice
2 apples, peeled and diced
1/2 C raisins
1/2 C brown sugar
1 tsp. vanilla
1/2 tsp. cinnamon
Directions: 
Bring the apple juice to a boil and then add in the brown rice, apples, raisins, brown sugar, vanilla and cinnamon.

Stir it all around until it’s combined.

Bring back to a boil, then cover the pot, reduce heat to low and cook an additional 10 minutes.

Remove from heat, stir and allow to rest another 5 minutes.
