We’ve been making a lot of cookies lately!  This time we whipped up a batch of Oatmeal Raisin; they have a little crunch on the outside, but soft and chewy on the inside.  You’ll love the simplicity of these cookies and you most likely have everything in your pantry.  I don’t like my cookies to have a strong cinnamon flavor so I only added a little, however you can add more if you prefer.  These only take a few steps to make and they bake up in a matter of minutes.  They’re especially good when they’re still warm from the oven!Ingredients are as follows:

1/2 C brown sugar
1/2 C white sugar
3/4 C butter, softened
2 eggs
1 tsp. vanilla
1 1/2 C flour
1/2 tsp. baking soda
3/4 tsp. cinnamon
1/4 tsp. salt
2 3/4 C oats
1 1/2 C raisins

Directions:

Preheat oven to 350 degrees; grease two cookie sheets.

Cream together the brown sugar, white sugar and butter.

Beat in the eggs and vanilla.

Mix in the flour, baking soda, cinnamon, salt and oats.

Fold in the raisins.

Place heaping spoonfuls onto the cookie sheets.

Bake 10-12 minutes; until golden brown around the edges.  Remove from oven; cool for a minute on the cookie sheet then transfer to a cooling rack.
