Recently I told you about these Chocolate Choc-Chip Peanut Butter Cup Cookies and how delicious they are.  While they’re still my favorite, I decided to switch things up a little and make a peanut butter version.  My husband is a big fan of peanut butter so these were made for him.  Once again, they are super simple to make and they are quite delicious too!  I made mine with an ice cream scoop again because it makes a big, thick cookie that’s a little crunchy on the outside and soft in the center.  You can always use a big spoon too.  If you have a peanut butter lover in your family then make sure you make a batch of these cookies soon!

Ingredients are as follows: 

3/4 C sugar
3/4 C brown sugar
3/4 C creamy peanut butter
2 eggs
1/2 C butter, softened
1 tsp. vanilla
2 1/2 C flour
1 tsp. salt
1 tsp. baking soda
1 C milk chocolate chips
3/4 C dark chocolate chunks (or semi-sweet chips)

Directions: 

Preheat oven to 350 degrees; grease two cookie sheets.

Cream together the sugars, peanut butter, eggs, butter, and vanilla.

Mix in the flour, salt and baking soda.

Fold in the milk chocolate chips and the dark chocolate chunks.

Scoop out (I used an ice cream scoop) some dough and place onto the cookie sheets.

Bake for 11-12 minutes; do not over bake!
