Cupcakes are always a hit and it’s one of my favorite treats to make!  The other day I wanted to make some, however I don’t have cake mixes on hand and I ran out of oil and only had a little bit of butter…yikes!  So I started experimenting and boy am I glad I did.  I came up with a recipe that is so easy, you normally have all the ingredients at home and you can make them any flavor you want!  What’s the secret?  You add sugar-free pudding mix and mayonnaise.  These cupcakes came out so moist and delicious.  I’ve made them twice already and I love them plain, but the kids like icing on top, so any way you eat them they are sure to please.  I hope you enjoy!
Ingredients are as follows:

2 C flour
1 C sugar
1 tsp. baking soda
1 small box of sugar-free pudding (I used Coconut Cream)
1 C water
3/4 C mayonnaise
1 tsp. vanilla

frosting:
12 ounces cream cheese, softened
1 1/2 C powdered sugar
3/4 C heavy whipping cream

Directions:

Preheat oven to 350 degrees; line a cupcake pan with liners.

Place flour, sugar, baking soda and pudding mix into a bowl.

Whisk together, then add the water, mayonnaise and vanilla.

Mix until completely incorporated.

Evenly divide the batter into the cupcake pan.

Bake 23-25 minutes, until a toothpick (in the center) comes out clean; set aside to cool.

Cream together the cream cheese and powdered sugar.  Slowly mix it the heavy whipping cream until it’s fluffy.

Once the cupcakes are cool, pipe some frosting on top!

Since mine were coconut cream flavored, I sprinkled on some toasted coconut!
