Fruit pizza is usually made with a sugar cookie crust, but I honestly don’t care for it. What I do care for is shortbread!  I love the rich buttery taste, how flaky it is and how it melts in your mouth.  My recipe has brown sugar in the shortbread and the cream cheese making this a decadent dessert.  It’s very simple to make and you can top it off with whatever fruit you have on hand.  Drizzle a little extra icing on top and you have a quick, easy  and delicious dessert…I hope you enjoy!

 

 Ingredients are as follows:
 
 shortbread:
1 C butter, room temperature
1/2 C brown sugar
2 1/4 C flourtopping:
8 ounces cream cheese, softened
1/2 C brown sugar
2 Tbsp. cream

fruit of choice

drizzle:
1/4 C reserved cream cheese mixture
1 Tbsp. cream
1 tsp. vanilla

Directions:

Preheat oven to 350 degrees; grease a 13 x 9″ cookie sheet.

Cream together the butter and brown sugar for a few minutes until it’s fluffy.

 

Mix in two cups of flour so a soft dough forms (adding the additional 1/4 C if needed).

Press dough into prepared cookie sheet and prick with a fork.

Bake for 18-20 minutes, until golden brown around the edges; allow to cool.

 

For the topping whip the cream cheese, brown sugar and cream together.

Reserve 1/4 C and spread the rest onto the cooled crust.

Top with desired fruit.

Mix the 1/4 C of reserved cream cheese mixture, cream and vanilla together.

 

Drizzle all over the fruit.

Slice, serve and enjoy!
